Common Handle Materials

410 stainless steelWidely used in the knife industry. It has 12% chromium, and 0.12% carbon content, giving it very good corrosion and wear resistance.
6061 aircraft-grade aluminum
One of the most common alloys of aluminium for general-purpose use. It has high corrosion resistance and a tensile strength that can range from 16,000 to 45,000 PSI.
G10 LaminateLayers of fiberglass are soaked in resin, and then highly compressed and baked. This makes them impervious to moisture and most liquids, and able to withstand extreme temperatures.
Glass Reinforced Nylon (GRN)
GRN has the benefit of high-strength, abrasion and impact resistance, and low weight. It's also resistant to variety of common oils and chemicals. The result is a durable knife handle that doesn't compromise on overall weight. It can be covered with a stainless steel wrap.

Common Blade Steel

8Cr13MoVA medium grade stainless steel with more carbon and less nickel than AUS-8 steel, and less expensive. Holds up reasonably well for day-to-day use, and it's quite easy to sharpen on a diamond stone. With green honing compound you can get close to a razor sharp edge.
AUS 8 A mid-range stainless steel in terms of quality and performance, hardened to RC 56 to 58. It's considered a 'general-purpose' steel, as it has reasonably good edge holding ability, is easy to sharpen, and has good rust and corrosion properties.
N680A stainless steel, chromium-molybdenum blend with the addition of vanadium and nitrogen, which provides superior corrosion resistance. Tempered to RC57-59 it has excellent edge retention, yet is reasonably easy to sharpen.
D2An an air-hardened tool steel that offers good corrosion resistance and excellent mileage in wear resistance. Holds an edge well but is easy to sharpen.
Sandvik 14C28NA premium knife steel that is very hard and provides good corrosion resistance. You get a blade that holds an edge well and is easy to sharpen.
